Last nightโ€™s dinner from my stories: ๐—ฆ๐˜‚๐—บ๐—บ๐—ฒ๐—ฟ๐˜† ๐—ฆ๐—ฎ๐—น๐—บ๐—ผ๐—ป ๐—•๐—ฎ๐—ธ๐—ฒ. I used a casserole dish but a sheet pan would work too! I cut Brussels sprouts, golden potatoes, tomatoes, broccolini, and zucchini into bite sized pieces. You could add any other veggies too (I like red onion, bell pepper, and asparagus too!) Add to the casserole dish and top with feta, olive oil, thyme, rosemary, oregano, and paprika. Mix all the veggies until they are coated with oil and seasoning. Add your salmon filets and drizzle with olive oil, lemon juice, and garlic. Top with lemon slices and bake at 325 for 25-30 minutes!
